THE "FINING" OR PURIFYING OF THE WINE
 
Wine lovers are permitted to visit the cellars and test the wines
After the wine has been purified and fined can it be bottled. After an initial three years customers can try the wine out at the cellars.
The fining of any wine is the process of extracting natural sediments that are the consequence of fermented grape juice. These minute particles swirl in the new wine until they settle to the bottom. If the sediments were left in the wine, the taste and the aroma would in fact not be significantly affected, but the wine would retain an undesirable cloudy “gloom”. Today, excellent filters are used to clear the sediments out away from the wine.
